Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 2/3 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1 tablespoon heavy cream (for brushing)
  • Coarse sugar (for sprinkling)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk and vanilla extract until just combined. Gently fold in the strawberries.
  5. Turn the dough out onto a lightly floured surface and knead gently a few times until it comes together. Pat the dough into a 1-inch thick circle.
  6. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  7. Brush the tops of the scones with heavy cream and sprinkle with coarse sugar.
  8. Bake for 18-20 minutes, or until the scones are golden brown. Cool on a wire rack.
